i <3 winter squash. they are hearty and can go in either direction towards sweet or savory. and they remind me it’s fall, which is definitely the best season. this week, i was overjoyed to find a spaghetti squash in my csa share, which i have never prepared myself. i ended up with three of these, so i decided to make the first one a sweet number. i sliced it in half, emptied out the seeds, spread a bit of butter and a touch of raw honey on it, sprinkled with cinnamon and nutmeg and baked at 375 until it was soft (which turned out to be 45 mins). halfway through and again at the end, i spooned the melted butter/honey mixture all over squash. deeelish, the flavors really baked in. plus, i find it fascinating how the flesh pulls apart into strings.
